My kids LOVE sweets…..sound familiar?   So I am constantly looking for ways to satisfy their sweet tooth, but feel good that I'm secretly giving them something healthy.  

Here is one way I give them the sweet treat they crave while also providing a yummy, EASY, dessert which is packed with protein and wholesome antioxidant-rich berries.    Shhhhhh!

Creamy Fruit Pudding Recipe

Cooking Time: 0

Yields: 4

This recipe is:

Ingredients:

  • 1 8-ounce package of soft tofu, drained
  • 3 cups fresh or frozen and thawed mixed berries, divided
  • 4 tablespoons orange juice concentrate
  • 4 teaspoons honey

Directions:

  1. Drain the tofu by pressing it between paper towels.
  2. Mix the tofu, half of the berries, orange juice concentrate and honey in a blender.
  3. Divide the remaining berries amongst 4 dessert bowls and drizzle tofu mixture over fruit.
