Healthy Lunch Ideas for Kids

I don’t know about you, but this mom is not ready for the kids to go back to school.

What I am also not ready for are those hectic mornings – getting everyone up and fed and dressed and making school lunches. This year I have made a promise to myself that I am going to be one of those moms who is organized and has the lunches ready to go the night before. Wish me luck!

In my dreams of healthy, pre-prepared lunches that my kids will love, I have searched Pinterest for ideas. I found a few clean eating school lunch ideas that I wanted to share.

Homemade Uncrustables

I found this on Super Healthy Kids and it’s such a great idea. Instead of buying those awful frozen store bought peanut butter and jelly sandwiches, make your own and freeze them. Plus you can use the type of bread (Ezekiel or homemade would be great), peanut butter or almond butter or cashew butter or sunflower seed butter, and jelly (any natural jelly with little or no sugar or homemade). Easy for you and delicious for your kiddos.

Another why didn’t I think of this? moment – freeze some of those healthy smoothies you love to make.  Jillee over at One Good Thing posted her favorite recipe and she uses frozen fruit to make and then actually freezes them, so you don’t have to pack something to keep it cold and it’ll be ready for your child to enjoy by lunchtime. 

Mini Frittatas

Fanny over at Oh Sweet Day made these for her kids and a light bulb went off in my head when I saw it. You can get so creative and make them super-healthy by sneaking in some veggies (check out my cookbook for how). You can freeze these too so by the time your little one has lunch, they’ll be thawed.

I happen to have a recipe in my secret ingredient cookbook for paleo pumpkin pancakes, so I will make those for my kids. But Momables gave me this idea to make mini ones and freeze them for their lunches. I also like the author’s motto – “cook once, eat twice”. Genius!
