Enjoy this Comfort Food without the Calories
I don’t know about you, but I am your typical Midwestern gal and I love a good ‘ole slice of apple pie.
But have you seen the ingredients that go into an apple pie? One recipe I found required 1/2 cup of white sugar. Yikes!
And have you ever baked an apple pie? You can spend hours in the kitchen. Not to mention the hours you’ll spend in the gym trying to burn off that 1/2 cup of sugar.
So I set out to solve these two apple pie problems.
I found this crockpot apple pie filling recipe on Pinterest (it’s gluten-free, vegan and low fat). It’s from Amy’s Healthy Baking, which is a great website if you’re looking for easy to make, healthy recipes.
Easy Crockpot Apple Pie Filling
Ingredients:
- 9 cups red apples
- 2 tbsp lemon juice
- 3 tbsp pure maple syrup
- 2 tsp ground cinnamon
- 1/4 cup cornstarch
- 1/2 tsp ground nutmeg
- 1-1/2 cup water
Directions:
- Add diced apples to a slow cooker, and toss with the lemon juice.
- Whisk together the remaining ingredients in a medium pot until smooth and the cornstarch has completely dissolved. Cook over medium heat, stirring constantly, for 5-8 minutes or until the mixture starts to thicken and has reduced by a third. Pour the mixture over the apples, and toss until all of the apples are coated.
- Cover the slow cooker with the lid, and cook the apples on HIGH heat for 3 ½ hours, gently stirring after every hour, or until the apples are extremely tender. Cool completely to room temperature in the slow cooker before transferring to airtight containers and refrigerating.
