Looking for a Healthy Sandwich Recipe
I’m all about comfort foods, especially when the weather starts to get cooler. Chicken salad sandwiches are definitely one of my favorite comfort foods, but as you know, there are many ways to make them and some are unhealthy.

This healthy chicken salad recipe is perfect in my book because it’s gluten free (if you use gluten free bread), dairy free and sugar free. Top it off with some avocado and you have the perfect sandwich.
Servings: 4
Ingredients:
- 3 cups diced cooked chicken
- 1/4 cup dried cranberries
- 1/2 cup diced celery
- 1/2 cup apple
- 1/4 cup chopped walnuts or pecans
- 5 tablespoons olive oil mayonnaise
- 2 teaspoons lemon juice
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Your favorite gluten free bread
Directions:
- Combine chicken, cranberries, celery, apple and nuts (if using).
- In a small bowl combine mayonnaise, lemon juice, salt and pepper. Stir into the chicken, adding more mayonnaise if needed.
- Line bread with lettuce and spread chicken salad on bread or serve chicken salad on lettuce-lined plates.
