Proof that Peanut Butter Cookies Can Be Healthy

I don’t know about you, but I love anything with peanut butter. It’s a great source of protein, it’s a healthy fat and it tastes delicious. 

The thing I like about peanut butter is that while you’re enjoying it, it makes you feel full. This prevents you from overeating. And that comes in pretty handy, especially when you’re eating these scrumptious peanut butter cookies from Laura Hamby. 

Healthy, Gluten-Free Peanut Butter Cookie Recipe

Makes 24 cookies.

Ingredients:

Directions:

  1. Preheat over to 350.
  2. Set aside an ungreased cookie sheet.
  3. In a large bowl combine dry ingredients, set aside.
  4. In a food processor blend syrup, oil, vanilla, and peanut butter.
  5. Add wet ingredients to dry ingredients, blend well.
  6. Shape dough into walnut size balls.
  7. Place on cookie sheet and flatten gently with the tines of a fork.
  8. Bake about 13-15 minutes.
  9. Cool on a wire rack.
