During the holiday season, it's easy to grab a box of store-bought cookies. But my goal is to break you of that habit.

Have you ever looked at the ingredient list of those frosting topped sugar cookies (I'm looking at you Market Pantry brand from Target!)? Do yourself a favor, put down the 16g of sugar per serving cookies and check out this easy and healthy chocolate truffle recipe from Laura Hamby.

Makes about 40 truffles

Ingredients:

  • 2 cups of gently softened or melted coconut oil
  • 2 cups of raw cacao
  • 1 tablespoon of vanilla
  • 5 tablespoons of raw honey
  • 1 cup of peanut butter

Directions:

Mix it all together and let it get hard in the refrigerator (takes about 20 or so minutes). Then use a melon baller that has a spring release to shape the truffles. Set them on a tray lined with parchment paper and put in refrigerator until they harden. Keep refrigerated in a glass container.

My kids love these and I hope you will too!
