An easy family dinner chicken recipe

Sometimes having a healthy meal on the table for dinner seems overwhelming, especially for working moms, but even for stay at home moms or dads with hectic schedules these days, dinner can be a difficult task. 

That’s why I love dishes like this chicken recipe – Smoky Chicken and Potatoes; it’s so refreshingly simple and easy to put together (even ahead of time) and then pop in the oven to have a fresh meal hot from the oven in about 30 minutes.  And while it’s in the oven, toss together a salad to go with it!

Smokey Chicken and Potatoes  (serves 4-6)

Prep this dish ahead of time the night before or morning of; then when you’re ready, combine ingredients and pop in the oven for about 30 minutes for a delicious and healthy family dinner.

  • 1-1/2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1-1/2 pounds baking potatoes, unpeeled, cut into 1/2-inch pieces
  • 1 sweet onion, cut into 8 wedges
  • 1 green pepper, cored, seeded, cut into strips
  • 4 cloves garlic, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons smoked paprika
  • 1 teaspoons salt
  • 1/2 teaspoons black pepper
  • 1 lemon, cut into wedges
  • 1/2 cup parsley, chopped

Directions:

  1. Heat oven to 450 degrees F.
  2. Coat a 13 x 9 x 2-inch baking dish with nonstick cooking spray.
  3. In a large bowl, combine chicken, potatoes, onion, green pepper and garlic. Toss with olive oil and season with paprika, salt and pepper. Place in prepared baking dish.
  4. Squeeze lemon wedges over top and scatter wedges over casserole.
  5. Bake at 450 degrees for 30 minutes or until chicken reaches 160 degrees (stir once after 20 minutes).
  6. Scatter parsley over top. Serve with additional lemon, if desired.
  7. (Prep Ahead Option): If prepping ahead, for Step 3: combine diced chicken in a container with the olive oil, garlic, paprika, salt and pepper.  In a separate container, store the potatoes, onion and green pepper.  When ready to bake, pour all the prepped ingredients into your prepared baking dish and stir together well, then proceed with Step 4 above.
