A New Twist to the Chicken Salad Sandwich
As a busy mom – like many of us! – I am always on the lookout for healthy meals that don’t require loads of effort. I found this southwest chicken salad recipe on my local news channel.
The great thing about this chicken salad recipe is that it’s full of southwest flavors and is perfect for a picnic or potluck since it has no mayonnaise or dairy.
Servings: 8
Ingredients:
- 2 pounds roasted chicken breast and thighs
- 1 cups cooked black beans
- 3/4 cups diced red onion
- 1 cups hot sauce
- 1/2 bunch cilantro
- 2 avocados
- The juice and zest of 1 lime
- Salt and pepper
Directions:
Combine all ingredients listed along with salt and pepper to taste.
