Clean Eating Recipe – Texas Caviar
After moving to Texas from Iowa, I learned all about Tex-mex and fell in LOVE!
This Texas caviar recipe has become a family favorite ever since my friend Kathleen brought it over for a tailgate party. And it can be enjoyed as an easy, clean eating recipe for a gathering any time of year.
Texas Caviar Recipe
INGREDIENTS:
- 1 15 oz can of sweet yellow corn (well drained)
- 1 15 oz can of black beans (well drained)
- 2 cups chopped tomato, onion and green chilis (mixed together)
- 3 medium sized cubed avocados (I like a lot of avocado)
- Chopped cilantro (to taste)
- Squirt of lime juice
- Squirt of lemon juice
- Garlic powder (to taste – I go on the light side)
- Salt (to taste)
- Pepper (to taste)
- Optional: chopped yellow or green onion
DIRECTIONS:
- Drain the corn, black beans and tomato mixture in a colander to avoid dip from being soupy.
- Mix all ingredients together and than add avocado. This dip is best to make fresh and serve because the avocados turn brown. If you do want to make other ingredients a head of time, you can, and just add the avocado before you serve.
- Serve with sturdy organic tortilla chips.
This dip only takes 5-10 minutes to make!
