An Easy, Clean Eating Sweet Potatoes Recipe the Whole Family Will Love.

Cooking Time: 6 to 8 hours

Yields: 8

This recipe is:  Gluten-Free, Vegetarian, Dairy-Free, Vegan

Ingredients:

  • 6 medium (2 pounds) sweet potatoes or yams, peeled and cut into 1/2-inch cubes
  • 1 1/2 cups organic applesauce
  • 1/3 cup maple syrup
  • 2 tablespoons coconut oil
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped walnuts, toasted

Directions:

  1. Place sweet potatoes in 2 to 3 1/2-quart slow cooker.
  2. Mix applesauce, maple syrup, butter and cinnamon together and spoon over potatoes.
  3. Cover and cook on low heat setting 6 to 8 hours or until potatoes are very tender.
  4. Sprinkle with nuts
  5. ENJOY!!  smiley
