Ahhhh…I love summer patio evenings in the backyard chillin' with friends.
My next door neighbor makes killer fajitas and they are so easy and awesome that I felt compelled to share them with you. I hope you enjoy them as much as I do.
Here's what you will need for Kara's Killer Fajita Recipe
- Whatever quantity of boneless, skinless chicken you desire
- ½ cup of fresh squeeze lime juice
- ¼ cup of olive oil
- 1 tbsp. of pepper
- 2 tbsp. of basil
- ¼ tsp. of salt
- 1 onion
- 1 red pepper
- Pound chicken and marinade in olive oil & lime juice.
Directions:
- Mix all seasonings and sprinkle over chicken.
- Slice onion & red pepper
- Place chicken in baking dish and bake for 30 minutes at 350 degrees.
- Remove chicken from baking dish and grill.
- Saute' onions & pepper in skillet with juice from baking dish.
- Lastly, place grilled chicken in skillet for 5 minutes.
Pretty simple.
