This Kale Salad Recipe Proves That Eating Healthy Can Be Delicious!

My job affords me the opportunity to meet and work with some amazing people. One of those people I had the great pleasure of meeting recently was Laura Hamby. Laura is an amazing chef and if you are in Dallas/Fort Worth, then she’ll even come cook for you!

Laura has agreed to collaborate with me and share some of her fabulous (EASY) clean eating recipes.  Here is the first of (I hope!) many recipes she will share with us. I have tried this and trust me, it’s incredible!

Kale Salad Recipe

  • 1 bunch of kale washed, dried with stems removed
  • 2 big handfuls of shredded purple cabbage
  • 1/3 cup sunflower seeds and pumpkin seeds
  • 1/3 cup olive oil
  • Juice of 1-2 lemons depending on size
  • 2 Tablespoons of honey
  • Pinch or two of salt

  • Toss all ingredients together and massage the salad until the kale becomes soft and all ingredients are well mixed

Note: Please adjust any ingredient to your taste. If you need more oil, lemon or honey add it, if you want less do it, make this salad your own! Also, you don’t have to use both kinds of seeds; use what you like. I suggest using as many organic ingredients as possible and if you haven’t tried raw honey, it’s really good! Check out the Environmental Working Group for the Dirty Dozen list of recommended produce to buy organic.

Laura Hamby | GroovyBeets.comLaura Hamby studied at The Institute For Integrative Nutrition and is a certified holistic health coach. She supports and encourages people to make healthy transformations in their life, one day at a time. Laura knows that lasting lifestyle change occurs by taking small steps and has seen how effective this approach is.

Her journey with health and fitness started in college. Laura became interested in the role food, exercise, and mindfulness played on overall well-being. She began studying the importance of eating food free of chemicals, dyes and preservatives and learned first hand how eating clean, moving the body and quieting the mind contributes to overall health.

She raises her family on clean food and believes keeping a stocked kitchen and cooking regularly are the keys to eating healthy. Laura teaches others how easily they too can adopt this philosophy. By explaining the principles of power cooking and teaching how to shop for healthier versions of conventional foods, she is helping families eat better.

Laura is also successful in getting kids to eat their vegetables by providing tips and tricks to their parents. Her knowledge and motivating ways have encouraged and supported others to make lasting healthy changes.
