This Kale Salad Recipe Proves That Eating Healthy Can Be Delicious!

My job affords me the opportunity to meet and work with some amazing people. One of those people I had the great pleasure of meeting recently was Laura Hamby. Laura is an amazing chef and if you are in Dallas/Fort Worth, then she’ll even come cook for you!

Laura has agreed to collaborate with me and share some of her fabulous (EASY) clean eating recipes.  Here is the first of (I hope!) many recipes she will share with us. I have tried this and trust me, it’s incredible!

Kale Salad Recipe

Ingredients:

  • 1 bunch of kale washed, dried with stems removed
  • 2 big handfuls of shredded purple cabbage
  • 1/3 cup sunflower seeds and pumpkin seeds
  • 1/3 cup olive oil
  • Juice of 1-2 lemons depending on size
  • 2 Tablespoons of honey
  • Pinch or two of salt

Directions:

  • Toss all ingredients together and massage the salad until the kale becomes soft and all ingredients are well mixed

Note: Please adjust any ingredient to your taste. If you need more oil, lemon or honey add it, if you want less do it, make this salad your own! Also, you don’t have to use both kinds of seeds; use what you like. I suggest using as many organic ingredients as possible and if you haven’t tried raw honey, it’s really good!
