I don’t know about you, but during this time of the year it becomes increasingly more difficult to eat clean. It isn’t because I have no self-control (but sometimes those white mashed potatoes do look good!), it’s because I find myself attending lots of holiday dinners hosted by others.
My solution? I always volunteer to bring a dish. This way I know at least one thing on the table is healthy and I won’t leave feeling yucky.
Today Laura Hamby is sharing another one of her healthy and delicious recipes. This carrot soufflé recipe is perfect to bring to a Thanksgiving potluck dinner.
Carrot Soufflé Recipe
Ingredients:
- 1 pound of carrots
- 3 large eggs
- ½ cup sugar
- ½ cup butter melted
- 3 Tablespoons flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
Directions:
- Cook carrots until very tender, drain and process in blender until very smooth and silky
- Stir together carrot puree and all other ingredients
- Spoon into 1 quart greased baking dish. Bake at 350 degrees for 45 minutes
Possible substitutions:
- Ghee or coconut oil instead of butter
- Rice or coconut flour instead of regular flour
- Honey instead of sugar
Note: The coconut oil and flour can be a strong for those who do not like that flavor. As always, i recommend using as many organic products as you can.
