I'm constantly looking for yummy, easy, fast, clean eating recipes to serve for entertaining and taking to holiday weekend events. I definitely am NOT a great cook, but these days you don't have to be! Eating clean can be simple.
This clean eating salad is perfect for Memorial Day weekend…and so easy!
- Pick your favorite greens – I like mixed greens because it's more interesting and you get the wide spectrum of health benefits from a variety.
- Pick your favorite tomato – Personally, the less chopping I have to do the better, so I tend to go with grape or cherry tomatoes and just throw them in. Sometimes if I'm really fancy, I will cut them in half 😉
- Cut up a cucumber and add it to the salad.
- Top with dried cranberries – to be Groovy Beets approved, get the kind that doesn't contain sulfites as a preservative. (Sulfites can be a source of headaches, hives, joint pain, asthmatic symptoms, allergic reactions and even heart palpitations.) Better yet, go organic if you can.
- Add your favorite nut – If you are trying to keep it clean, choose a nut that doesn't have added glaze. Pecans are my favorite.
With this salad you've accomplished a lot: greens to cleanse your blood, tomatoes for cancer-fighting antioxidants, cranberries for decreased blood pressure and cancer prevention and nuts for anti-inflammatory support. Don't ruin a good thing by drowning it in heavy dressing. A little balsamic goes a long way.
